"South of the Border"
Hola! Here are a couple of easy (a busy mom’s favorite word!) recipes for cold winter days or when you’re in the mood for a south of the border meal made by gringos!
Tortilla Soup (thanks, Deb!)
14.5 oz. Chicken broth
1 can Mexican tomatoes
1 can diced chilis
1 can whole corn, drained
1 can black beans, rinsed
Cooked chicken chunks
Heat through and serve with tortilla chips
Enchilada Casserole (thanks, Joyce!)
1 ½ lb. Ground chuck
1 can cream of chicken soup
10 oz. Can enchilada sauce
8 oz. Jar taco sauce
½ lb. Cheddar cheese – grated
1 bag Doritos
½ white onion
Brown meat and simmer with chopped onion. Add sauces and soup and mix thoroughly. Line 9x13 pan with crushed Doritos. Pour in mixture and sprinkle with cheese. Bake at 300 degrees – 20 minutes.
(Wal-Mart has piñatas…just stuff with some candy and have a fiesta!)
